Hyun Jung Kim is the Executive Chef and Owner. He focuses on contemporary French-
Canadian cuisine. His ingenuity and flare for presentation of fresh, seasonal dishes not
only continue to exceed the expectations of his guests but also inspire his team
The menu changes regularly ensuring seasonal freshness and local ingredients native
to our Canadian culture. These are incorporated into the menu and dining experience
we provide for you.
We include, but are not limited to, set menus ranging from three to
five course choices, canapés, cheese and charcuterie platters, fresh oyster bar, a la
carte menu, hors d’oeuvres, and post-dining sweets!
Our staff are experienced in pairing wine with your food options if you’re looking to
enhance your experience! Our wine list is catered to suit our style of menu!
We also carry local craft beer and provide exciting and creative craft cocktails!
Private Dining Guidelines
Bookings and inquiries can be made through the event coordinator and manager at

Reservations during weekend business hours is a maximum of 14 people. Any party
size greater would require buyout expenditure procedures.

Lunch buy-out — Sunday-Saturday 11:00am - 3:30pm (hard-stop Tuesday-Saturday)
Dinner — Tuesday-Sunrday 5:00pm-10:00pm
Dinner Buy-out — Sunday-Saturday 4:00pm - 1:00am (last call 12:20am)
Minimum Food Expenditures
Sunday-Thursday Buy-Out - $2000.00
Friday or Saturday Buy-Out - $3500.00

Deposit and Cancellation Terms
For reservations of party sizes between 10-14 people on Fridays and Saturdays, a $20/person deposit is required by a
valid credit card, e-transfer, or cheque. Will be returned on day of reservation. Without
48-hour notice of cancellation, client will lose deposit.
For buy-out events a deposit of 25% or $20/person will be required by a valid credit
card, e-transfer, or cheque. This amount is non-refundable in the circumstance of
cancellation less than two weeks prior to event.
18% auto gratuity will be added to your private booking.
Outside Food and Beverage
Cake cutting and outside desserts — $3.00/person
Corkage Fee — $25.00/bottle
Responsible Service of Alcohol
In compliance with our provincial and federal guidelines, we at CORE, reserve the right
to restrict or refuse service of alcohol to those deemed to be intoxicated.
The room will be fully inspected post event. Any or all damages caused by your guests
to furniture, fixtures or equipment will be the client’s responsibility. If damages are
discovered, you will be provided a quote for repair or replacement. This will be charged
to the credit card filed for the event. Non-negotiable.
